2 cups sugar |

2 cups peeled apples (diced) |
1 cup nuts (i like pecans) |
Grease 2 loaf pans. In a large bowl, beat together the sugar, oil and eggs. In a separate bowl, sift together the flour, baking soda, and cinnamon. Add the dry ingredients to the sugar mixture. Add the vanilla,apples and nuts. Pour the batter into the prepared pans. Bake in a 325 oven for 1 hour. Makes 2 loaves

mash bananas and mix with other ingredients. Bake at 350 for 50 minutes.

1 cup chopped nuts |
Put zucchini in strainer and press or squeeze with hands to get excess liquid out. Beat eggs, sugar, and oil together. Add flour, baking powder, soda, cinnamon, salt, vanilla, and nuts. Mix together by hand. Add zucchini (minus liquid). Beat mixture. Pour into 2 greased, floured, loaf pans. Bake 1 hr. at 350 deg. F. Recipe may be doubled.

Combine pumpkin, butter, and eggs. Add remaining ingredients and stir. Pour into oiled loaf pans or muffin tins. Bake at 350 degrees for 30 minutes or until tops brown. To give as gifts, bake in oiled empty coffee or tea tins.
