Red Eye Gravy a'la Granny

| A juicy cut o' Ham Steak with lots O'fat around it |
A medium center cut ham steak |
| A bit o' butter |
1 TBsp Butter |
| a cup o' java juice |
1 cup black coffee |
Slash the fat round the ham bout every inch or so so's it won't curl while you is fryin it. Melt the butter in a skillet and fry the ham til its real brown on both sides. Take out your meat n' pour in the java When you mixes up the ham fat on the top and the reddish juice underneath, you has real red eye gravy. Splash it over your ham but best of all save some to pour over your biscuits!!
Jest Plain OL' Apple Pie

In the lower half o' yore pie outercoverin lay out layers o'pome an tween the layers sprinkle some o' yore tartnin' tart hide, wheaten flour, n' spices. Put some teeny dots o' butter over the top. Lay on the upper half o' yore pie outcoverin' with a few holes punched in fer to let out the steam n' bake a good bit (25 minutes at 400)
Possum Dip
| 1 large Possum (ground beef) |
2 16 oz cans ranch style beans |
| 1 can rolte tomatoes with green chiles |
1 medium onion chopped |
| garlic powder to taste |
salt and pepper to taste |
| 2 1 pound boxes velveeta Mild mexican cheese |
1/2 cup milk |
| corn chips |
In a large deep skillet brown possum and onion. Remove the mixture from the pan and drain it. in the same pot mix the beans, chilies and tomatoes, and cook on medium heat until mixture is cooked down a little. Return the possum and onion to pot. In a microwave safe dish combine the cheese cubes and milk, and microwave until melted. Pour melted cheese in with other ingredients and cook over low heat for about 10 minutes. Stir often. Pour over corn chips.
Crawdad Gumbo

6 large tomatoes peeled and chopped |

| 2 jugs o' crick water |
2 quarts water |

If the shrimp , or crawdads is fresh, fust drown the critters in boilin water a second then let em sit a spell ( 2-3 minutes) in the hot water. Then strip off the shells, take out the black line from inside the meat inside. Heat up the butter in a big pot and then throw in the onion, tomaters, okra, bay leaf, thyme, rice and water. Let the whole kiboodle bubble (simmer ) for an hour.oss in your critters, or shrimp; wait til theys real hot. satl and pepper'til your lickin finger knows its right and diper it inta soup bowls. makes 6 to 8 servings.
Granny's Nerve Tonic
| 2 cups sugar |
1 cup water |
| 2 750-ml bottles rose' wine |
2 cups orange juice |
| 2 cups cranberry juice |
1 quart strawberries |
| 1 quart sparkling water |
3 limes sliced |
Combine sugar and water and bring to a boil.reduce heat and simmer for about 5 minutes. Cool. In a pitcher combine the syrup with the wine and fruit juices. add the berries pour over ice and add sparkling water. garnish with lime slices. serves 30
