Aunt Bee's Fried Chicken

1 Frying chicken
2 eggs beaten
all-purpose flour
Shortening
salt to taste

Wash and cut up chicken. Dip the pieces in the beaten egg, season with salt, and roll in flour. Put a right smart amount of shortening in a frying pan and melt it. When its good and hot, turn it down a little and fry the chicken slowly Turn the chicken pieces over 3 to 4 times and cook slowly for about 15 to 20 minutes. After it gets brown, put a lid over the chicken and simmer for about 20 minutes.

Goober's Secret Spaghitti Sauce

1 large onion 1t. thyme
1 med. green pepper 1t. oregano
1 T. butter 1 bay leaf
1&1/4 Lb ground beef salt & pepper to taste
1 (6 oz) can tomato paste 1 pkg Italian spaghetti sauce mix
1 (4&1/2oz) jar sliced mushrooms 1t. garlic salt
2 (14&1/2oz) cans stewed tomatoes 1/2 cup water
1 (15oz) can tomato sauce cooked pasta, tossed with butter

Chop the onion and the green pepper.In a large skillet heat the butter ans saute the onion and green pepper untill tender. Remove from skillet . Add the ground beef to the skillet and cook untill browned. In a large saucepan combine the sauteed onion and pepper, the ground beef, and the remaining ingredients except the pasta. Simmer over low heat for an hour. Serve over buttered pasta.

Otis Campbell's Rummy Tummy Omlet

Make a plain omlet, and place on a silver plated dish. Pour 1/2 cup of rum over it, touch a lighted match to it, serve immediately. Make sure the rum is of good quility or it will not burn.

Gomer's Banana Bread Pyle

1 cup butter or oil
2 cups sugar
4 eggs, beaten well
6 to 7 bananas, mashed
2 1/2 cups sifted all-purpose flour
1 teaspoon salt
2 teaspoons baking soda
1/2 cup chopped macadamia nuts

Grease 2 large loaf pans or 5 small ones. Cream the butter with the sugar. Add the eggs and beat well. Add the mashed bananas, stirring to blend. In a separate bowl sift together the dry ingredients. Fold the dry ingredients into the batter, mixing well. Add the macadamia nuts. Pour the batter into the pans. Bake in a 350' oven for 50 to 60 minutes, or until done. For muffins, fill 12 muffin cups 1/4 full and bake in a 350' oven for 35 to 45 minutes. Makes 2 large loaves, 5 small loaves, or 12 large muffins.

Ernest T. Bass's Chicken-Theif Stew

All- purpose flour 1-4lb chicken cut into pieces
1/2 cup oil 1/2 cup onions chopped
3 cups canned tomatoes 1 cup water
1&1/2 T. salt 1 T. worcestershire sauce
1/4 t. cayenne pepper 2 t. sugar
3 cups whole kernel corn 3 cups lima beans

Flour chicken. In a large stock pot brown the chicken in the oil. Add the onions and cook until the onions are clear, stirring occasionally. Add the tomatoes, water, and seasonings. cover and simmer untill the chicken is almost tender. Take the chicken out of the stew and remove the bones and skin. Leave the chicken meat in fairly large pieces. Return to the pot add the corn and limas. Continue cooking untill vegetables are tender.

Opie's Lemonade Pie

1-8oz.carton coolwhip 1-6oz. can frozen lemonade
1-14 oz can sweetened condensed milk 1-9inch graham craker crust

In a large bowl combine cool whip, lemonade, and sweetened condensed milk, blending well. pour mixture into crust and chill untill firm 2 hours.

Pan-Fried Flounder Floyd

1/2 cup oil 1/2 cup cornmeal
2 t. salt 1/4 t. pepper
1/4 t. garlic powder 2 pounds flounder filletts

In a skillet heat oil over medium heat. In a shallow dish combine the cornmeal, salt, pepper, and garlic powder. Roll fish in the cornmeal mixture and drop into hot oil. Fry 3 to 5 minutes untill browned. Turn and brown other side.
